Greek Baked Salmon Recipe

It’s Greek baked salmon night? Oh, you know it’s going to be a good one then. This dish is your new go-to whether you’re pulling together a quick weeknight dinner or trying to impress the family. Sure, there’s a ton of ways you can make salmon, but this version is a total Mediterranean mood. You won’t regret it.

Greek Baked Salmon

Ingredients

  • 1/4 cup extra-virgin olive oil
  • Juice of 2 lemons
  • 1 clove garlic, minced
  • 1 tsp. dried oregano
  • 1/2 tsp. red pepper flakes
  • Freshly ground black pepper
  • 1 cup cubed feta
  • 1/4 cup sliced kalamata olives
  • 1 cup quartered tomatoes (or halved cherry tomatoes)
  • 1/4 cup chopped Persian cucumbers 
  • 1/4 chopped red onion 
  • 2 Tbsp. freshly chopped dill
  • 1 lemon, thinly sliced
  • 1 small red onion, sliced
  • 4 salmon fillets (12-oz. total), patted dry with paper towels 
  • Kosher salt
  • Freshly ground black pepper

Directions

Step 1

Preheat your oven to 375°F and let’s give that feta some love. In a big bowl, whisk together olive oil, lemon juice, garlic, oregano, and a pinch of red pepper flakes for some kick. Season with a little pepper, then toss in the feta so it’s fully coated in that zesty marinade. Cover it up and pop it in the fridge for about 10 minutes while you prep the rest.

Step 2

Once that’s chilling, it’s salmon time! Scatter your lemon slices and red onion across the bottom of a large baking dish (it’s basically a bed of flavor.) Then, lay the salmon fillets on top, skin side down, and season generously with salt and pepper. Slide that dish into the oven and bake until your salmon is tender, flaky, and perfectly opaque, about 18 to 20 minutes. As a nice added bonus, your kitchen will start to smell amazing.

Step 3

While the salmon does its thing, grab that marinated feta from the fridge. Add in your chopped tomatoes, olives, cucumbers, red onion, and fresh dill. Then, gently fold everything together (just like Moira Rose says). You’ll do this until it looks like the most beautiful Mediterranean salad you’ve ever seen.

Step 4

Finally, you get to assemble your masterpiece! Plate the salmon with those roasted lemon and onion slices, then spoon the marinated feta mixture over the top. Step back, admire your work, and try not to drool. Before you know it, you’ll be going back for seconds.
