Bacon Chicken Thighs With Garlic Cream Sauce Recipe

Is there anything more magical than a juicy chicken thigh with a golden crispy skin? Didn’t think so. But this bacon chicken thighs recipe went ahead and cranked up the magic anyway. That’s right, these glorious thighs get a sizzling sear, then gets cozy in a dreamy mushroom parmesan cream sauce. We’re talking bacon, mushrooms, cheese… need we go on? It’s rich, creamy, and straight up comforting. Basically, it’s the kind of dish that makes you want to lick the skillet clean. Keto or not, this one’s pure weeknight wizardry.

Bacon Chicken Thighs With Garlic Cream Sauce

Ingredients

  • 4 slices bacon
  • 1 1/2 lb. bone-in, skin-on chicken thighs
  • Kosher salt
  • Freshly ground black pepper
  • 1 small red onion, chopped
  • 8 oz. mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 small bunch thyme
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup freshly grated Parmesan
  • Juice of 1/2 lemon
  • Freshly chopped parsley, for garnish

Directions

Step 1

Let’s kick things off with everyone’s favorite smell: sizzling bacon. Cook those strips in a large skillet over medium heat until perfectly crispy and impossible to resist, about 8 minutes. Try not to eat them all- you’ll need them later! Once they’re done, transfer the bacon to a paper towel lined plate and keep about 2 tablespoons of that glorious bacon fat in the pan.

Step 2

Now for the star of the show: chicken thighs! Give them a generous sprinkle of salt and pepper- we’re not shy here. Then, crank the heat to medium-high and lay those beauties skin side down in the skillet. Cook until the skin is golden and crisp, about 5 minutes, then flip and sear the other side for another 5. Once they’re perfectly bronzed, remove the chicken and set it aside.

Step 3

In that same skillet (because we love a one pan wonder), toss in the onion and let it soften and mingle with all that bacon-y goodness for about 5 minutes. Add the mushrooms, season with salt and pepper, and cook until they’re golden, another 5 minutes or so. Stir in garlic (the secret weapon), then pour in chicken broth, cream, Parmesan, thyme, and a splash of lemon juice for brightness. Bring everything to a gentle simmer and let it bubble away for about 5 minutes.

Step 4

Invite the chicken back to the party and nestle it into that creamy, dreamy sauce. Let it all simmer together until the chicken is cooked through and the sauce has thickened just enough to coat a spoon, about 10 minutes.

Step 5

Last but not least, sprinkle with that crispy bacon you (hopefully) didn’t snack away, maybe a little extra Parmesan for good measure, and serve it up! Dinner perfection achieved.
