Easy Egg Roll In A Bowl Big

Ingredients

  • 1 tablespoon olive oil or vegetable oil
  • 1 pound ground pork, turkey, or chicken
  • ½ teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • ⅓ cup mayonnaise
  • 1-2 teaspoons Sriracha, to taste
  • 4 scallions, thinly sliced (about ⅓ cup)
  • 3 cloves garlic, minced
  • 14-16 ounces cruciferous slaw mix
  • 2 tablespoons coconut aminos

Directions

Step 1: Cook the Meat

First, heat the oil in a large frying pan over medium-high heat until it’s hot and shimmering. Add the ground meat and season it with kosher salt and black pepper and then cook for about 6 minutes, breaking the meat into small pieces with a wooden spoon as it cooks. You’re looking for meat that’s cooked through and lightly browned.

Step 2: Make the Spicy Mayo

While the meat is cooking, you can quickly whip up the spicy mayo. Grab a small bowl and stir together the mayonnaise and 1 teaspoon of Sriracha. Give it a taste, and if you like a little more heat, add another splash of Sriracha. Once it’s just right, set the spicy mayo aside for later.

Step 3: Add the Garlic and Scallions

Once the meat is cooked, then add the sliced scallions and minced garlic right there into the pan. Stir everything together and cook for about 30 seconds, just until the garlic and scallions become fragrant. Be careful not to let the garlic cook too long or it’ll burn.

Step 4: Cook the Slaw

Next, add the cruciferous slaw mix and coconut aminos to the pan. Give everything a good stir so the meat, vegetables, and sauce are evenly combined. Cook for about 3 minutes, stirring occasionally, until the vegetables are tender but still have a little crunch.

Step 5: Drizzle and Serve

Divide the stir-fry between bowls and drizzle each serving generously with the spicy mayo. If you want a little extra freshness and crunch, sprinkle some additional sliced scallions over the top.

And that’s it! You get all the delicious flavors of an egg roll without the wrappers, frying, or extra fuss. Serve it on its own for a light and satisfying meal, or pair it with rice when you’re in the mood for something a little heartier.
