- ½ teaspoon kosher salt
Cauliflower Rice
- 1 tablespoon extra virgin olive oil
- 12 ounces frozen cauliflower rice
- 1 garlic clove, finely chopped
- ½ teaspoon kosher salt
- 1 teaspoon finely grated lemon zest
For the Turkey and Assembly
- 1 tablespoon extra virgin olive oil
- ½ yellow onion, chopped
- 1 pound ground turkey
- 2 garlic cloves, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- ¾ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
- Peperoncini, for serving
Directions
Step 1: Make the homemade tzatziki.
First, grab a medium bowl and add the grated cucumber, chopped garlic, Greek yogurt, fresh mint, and salt, then stir everything together until well combined. Once your tzatziki is mixed, set it aside at room temperature while you prepare the rest of the ingredients. This gives the flavors a little time to come together, making the sauce even more delicious. If you’re preparing everything ahead of time, you can also cover it and refrigerate it until you’re ready to serve.
Step 2: Prepare the cucumber salad.
After that, grab a large bowl and add the sliced cucumbers, chopped onion, quartered cherry tomatoes, olive oil, and salt. Toss everything together until the vegetables are evenly coated. Set the salad aside while you work on the cauliflower rice and turkey. As it sits, the vegetables will release a little juice and soak up the dressing, adding even more flavor to every bite.
Step 3: Cook the cauliflower rice.
Heat the olive oil in a large skillet over medium heat, then add the frozen cauliflower rice. Spread the cauliflower rice into an even layer and cover the skillet with a lid, then let it cook undisturbed for about 8 minutes. After 8 minutes or so, remove the lid and stir in the chopped garlic and salt. Continue cooking for another 2 minutes, stirring frequently, until the garlic smells fragrant and some of the cauliflower pieces begin to brown. After that, transfer the cauliflower rice to a large bowl and stir in the lemon zest. Cover the bowl to keep the rice warm while you cook the turkey.
Step 4: Cook the seasoned ground turkey.
Using the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the chopped yellow onion and cook for about 5 minutes, stirring occasionally, until it softens and becomes translucent. Next, add the ground turkey, chopped garlic, dried oregano, smoked paprika, salt, and black pepper. Use a wooden spoon or spatula to break the turkey into smaller pieces as it cooks. Continue cooking for about 6 to 8 minutes, stirring occasionally, until the turkey is no longer pink and any liquid in the bottom of the pan has evaporated. The turkey should be nicely browned and coated in all those flavorful seasonings.
Step 5: Assemble the gyro bowls.
Now comes the fun part! Divide the warm cauliflower rice among your serving bowls, then add a generous portion of the seasoned ground turkey to each one. Next, spoon the fresh cucumber salad alongside the turkey. Add a dollop of homemade tzatziki on top, making sure each bowl gets plenty of that cool, creamy sauce.
Step 6: Add the finishing touches and serve.
Finally, serve the bowls with peperoncini on the side for a tangy, slightly spicy kick. If you’d like, you can also add a little extra fresh mint or a squeeze of lemon for even more brightness.
Dig in and enjoy! These low carb turkey gyro bowls are fresh, satisfying, and full of Mediterranean inspired flavor. They’re delicious straight from the skillet, and you can also prepare the individual components ahead of time for quick and easy lunches or dinners throughout the week.
