Sure, buffalo wings will always have your heart (especially on game day), but sometimes you crave something fresher and lighter. Enter: buffalo shrimp lettuce wraps- a total game changer. They’re quick, flavorful, and come together in under an hour, making them perfect for meal prep, lunch, or afternoon snack that actually feels exciting.

Buffalo Shrimp Lettuce Wraps

Ingredients

  • 4 Tbsp. butter
  • 2 garlic cloves, minced
  • 1/4 cup hot sauce, such as Frank’s
  • 1 Tbsp. extra-virgin olive oil
  • 1 lb. shrimp, peeled and deveined, tails removed
  • Kosher salt
  • Freshly ground black pepper
  • 1 head romaine, leaves separated, for serving
  • 1/4 red onion, finely chopped
  • 1 rib celery, sliced thin
  • 1/2 cup blue cheese, crumbled

Directions

Step 1

Let’s get saucy! In a small saucepan over medium heat, melt your butter until it’s smooth and golden. Toss in the garlic and let it cook for about a minute, just until your kitchen starts smelling irresistible. Pour in the hot sauce and give it a good stir to combine. Turn the heat to low and let that fiery, buttery goodness hang out while you move on to the shrimp.

Step 2

Once all that’s marinating, grab a large skillet and heat up a bit of oil over medium heat. Add the shrimp, season with a pinch of salt and pepper, and cook until they’re pink, juicy, and slightly curled- about 2 minutes per side. When they’re perfectly done, turn off the heat and pour that glorious buffalo sauce over them. Give everything a toss so each shrimp is fully coated and ready to bring the heat.

Step 3

Now for the fun part! Lay out your romaine leaves (they’re your crunchy, low carb “shells”), then add a scoop of buffalo shrimp right in the center. Top with a sprinkle of red onion, a few celery slices for crunch, and a crumble of blue cheese. Take a step back, admire your colorful, flavor-packed creation… then dig in before someone else does.
