Crock Pot Cauliflower Chicken Chili Recipe

When it comes to simple yet filling meals, chili is hard to beat. There are tons of different recipes to choose from, ranging in all kinds of flavors and level of spice. So, if you’re looking for something to please a big crowd, or even just picky eaters, then this crock pot cauliflower chicken chili recipe is for you.

By and large, one of the best things about chili is how easy it is to make. Just slice and dice your ingredients, throw everything into the crockpot and walk away. Who says everything has to be fancy in order to be amazing?

Another added perk to cauliflower chicken chili is it’s loaded with vegetables. Before you dismiss this dish as boring bunny food, it’s also packed with plenty of protein as well. Swapping in cauliflower for traditional chili beans just lowers the carb count and leaves more room for the delicious flavors to shine.

Cauliflower Chicken Chili

Ingredients:

  • ½ cauliflower head, diced
  • 2 white onions, diced
  • 1 poblano pepper, finely diced
  • 1 yellow bell pepper, finely diced
  • 2 garlic cloves, minced
  • 1 (28 oz.) can tomato puree
  • ½ cup chicken stock
  • 2 tbsp. chili powder
  • ¼ tsp red pepper flakes
  • 1 tsp sea salt
  • ½ tsp freshly ground pepper
  • 6 boneless skinless chicken thighs, cut in ½ inch pieces
  • 1 lime, cut into wedges
  • 1 medium avocado, cubed

Directions:

Step 1

Before you begin, you’ll want to grab your crock pot. If by chance you’re someone who likes to avoid messes as much as possible, you might want to consider investing in crock pot liners. Not only are they super versatile, but they make kitchen clean up a breeze.

Step 2

Next, dice up your vegetables and cut the chicken into small pieces. Toss all of the ingredients into the crock pot and stir until everything is combined. Set the cooker to low and cook for 8 hours. However, if you’re running short on time, switch the setting to high and cook for 3-4 hours.

Step 3

Once the chili is cooked, taste it and adjust the seasonings if need be. Afterwards, prepare your lime wedges and cube up the avocado.

Step 4

Finally, scoop out your bowl of chili and top with the avocado and a squeeze of lime juice. Last but not least, serve warm and enjoy.
