When you need a quick and easy lunch, you can almost always turn to a good bowl situation. And no, we’re not talking about your standard chicken and rice combo- that’s way too predictable. Instead, mix things up with something that’s endlessly customizable and totally satisfying. Case in point: egg roll bowl.

Think of them as egg rolls, but they ditched the wrapper and decided to live their best life. All the bold, savory flavors of your favorite takeout order- minus the deep fryer and with a whole lot more staying power. As a result, you’ve got a hearty, flavor packed bowl that keeps you full and happy for hours.
Whether you’re trying to go low carb, spice up your lunch routine, or just need a cheap and easy dinner that doesn’t taste like a compromise, these egg roll bowls are the move. Quick, tasty, and endlessly customizable- what’s not to love?
Ingredients
- 1 Tbsp. vegetable oil
- 1 garlic clove, finely chopped
- 2 lb. ground pork
- 1 Tbsp. finely chopped peeled ginger
- 1 Tbsp. toasted sesame oil
- 1/4 head of green cabbage, thinly sliced
- 1/2 yellow onion, thinly sliced
- 1 cup shredded carrot
- 1/4 cup soy sauce
- 1 Tbsp. sriracha
- Kosher salt
- 1 scallion, thinly sliced
- 1 Tbsp. toasted sesame seeds
Directions
Step 1
Heat a drizzle of vegetable oil in a large skillet over medium heat. Don’t overheat it, though! Once your oil is shimmering, toss in the garlic and ginger. Stir them around until your kitchen smells absolutely amazing- about a minute should do it. This is your flavor foundation, so let it shine.
Step 2
Next up, add the pork. Break it apart with a wooden spoon as it cooks, letting it brown and crisp up in spots. Keep it going for 8 to 10 minutes, until it’s cooked through and deliciously golden.
Step 3
Once that’s done, the fun part begins. Scoot the pork to one side of the pan and pour in a little sesame oil- it’s about to get extra flavorful. Add your cabbage, onion, and carrot, then give everything a good stir to mix it all together. Splash in soy sauce and sriracha for that perfect balance of salty, spicy, and savory. Keep stirring until the cabbage softens up, about 5 to 8 minutes. Lastly, season with a pinch of salt to taste.
Step 4
Finally, time to serve! Divide the pork mixture among bowls and finish with a sprinkle of scallions and sesame seeds for that extra crunch and pop of color. And there you have it- egg roll bowls that are every bit as satisfying as the takeout version (maybe even better.)
