In truth, the trick to this recipe how you prepare the chicken. All you need is chicken, buttermilk, and about 30 minutes of marinade time, although overnight is even better. Simply pour the buttermilk over the chicken and let the magic of the buttermilk do it’s thing. Because buttermilk has some slight acidity, it makes the chicken tender and juicy without breaking down the protein or making it chewy and tough. Once the chicken is marinated, drain the buttermilk and pat the chicken dry. It’s as simple as that!
Ingredients:
- 2 cups buttermilk
- 8 boneless chicken breast
- 4 tsp taco seasoning
- Salt and pepper
- 20 oz. Ro-Tel tomatoes and chilies
- 2 cups queso dip
- 2 cups pepper jack and cheddar cheese, shredded
Directions:
Step 1
Preheat the oven to 375º. Then, put the chicken in ziplock freezer bag (or reusable silicone bag) with buttermilk and let sit overnight, or at the very least for 30 minutes. Drain the buttermilk, and pat the chicken dry.
Step 2
Next, sprinkle the chicken with taco seasoning and salt and pepper. Then, place the chicken in a glass baking dish.
Step 3
Afterwards, drain the tomatoes and chilies and dump half on the chicken, followed by the queso, and then the remaining tomatoes on top. Cover each chicken breast with the grated cheese blend.
Step 4
Bake for 25-30 minutes, until the chicken is cooked through. Serve warm, and of course, enjoy!
