  • 1 cup of your favorite fruit, cut into small pieces
  • 2 tbsp. honey
  • 1 cup plain Greek yogurt
  • 1 cup granola

Directions:

Step 1

When making this recipe, you can use arrange mini cupcake liners in a mini muffin tin or even on a baking sheet. Prepare either the muffin tin or baking sheet and set aside.

Step 2

Now, grab a medium bowl and add the fruit and drizzle the honey over the top. Use a fork to mash the fruit, until only smaller pieces remain. If you’re using larger fruit, dice them into smaller pieces to the mashing a bit easier. On the other hand, if you choose smaller fruit, you can forgo cutting them beforehand. For instance, juicy berries, like raspberries, blackberries, or blueberries, are perfectly mashable on their own. Lastly, stir in the Greek yogurt and mix until combined.

Step 3

Of course, now it’s time to assemble the bites. Start by spooning a teaspoon or two of granola into the bottom of each cupcake liner. Then, add a large spoonful of the frozen yogurt mixture on top. You can even sprinkle some granola or top with a piece of fruit for a bit of garnish.

Step 4

Last but not least, place the frozen yogurt bites in the freezer to set for at least 2 hours.

Notes

You can easily store these frozen yogurt bites in a freezer bag or air-tight container in the freezer for up to 3 weeks. Additionally, a full-fat Greek yogurt typically holds up better in the freezer because it has lower water content, meaning the bites will be creamier rather than like icy crystals.
