Undoubtedly, anything to do with tacos is usually a crowd pleaser, and these low carb stuffed taco tomatoes are no exception! This super easy recipe comes together in under 30 minutes. Not to mention, it only a single skillet. This low carb dish uses simple ingredients, like ground turkey, zesty taco seasoning, and then is loaded up with all your favorite toppings. Ingredients:
- 1 tbsp. extra-virgin olive oil
- 3/4 lb. ground turkey
- 1 medium onion, chopped
- 1 (1-oz.) packet taco seasoning
- 4 large, ripe tomatoes
- 1/2 cup shredded Mexican cheese blend
- 1/2 cup shredded lettuce
- 1/4 cup sour cream
Directions:
Step 1
In a large skillet over medium heat, heat your olive oil. Add onion and cook, stirring, until soft, about 4-5 minutes. Once cooked, add the ground turkey and taco seasoning. Cook and break up meat with a spatula, until no longer pink, 7 minutes or so. Drain any excess fluid if needed.
Step 2
While the ground turkey mixture is cooking, you’ll want to prepare your tomatoes. Start by flipping over the tomatoes so they’re stems are down, and slice to make 6-8 wedges, being careful not to cut all the way through though. Carefully spread open wedges, creating a nice spot in the middle to fill with delicious goodness.
Step 3
Lastly, divide and scoop the taco meat into the prepared tomatoes, then top each with cheese, lettuce, and sour cream before serving. If you’re looking for a bit of a crunch, try adding some tortilla strips (or even break up a few tortilla chips). Of course, you can also add some hot sauce or sliced jalapenos as well to take the flavor (and heat) up a notch. The possibilities are endless with this tasty dish!
