Quick & Healthy Ta-Cone Recipe

Taco Cones, or ta-cones as we like to call them, are perfect for celebrating Taco Tuesday. Not to mention, they can easily turn into a grab-and-go meal. Better yet, you can even prep them ahead of time, making them an excellent option for those busy and chaotic weeknights, whenever you’re ready to eat. This quick and healthy ta-cone recipe puts a fun and creative twist on traditional tacos – great for family dinners and tailgates, too!

Healthy Ta-Cone Recipe

Ingredients:

  • 2 lbs. ground turkey
  • 1 tsp minced garlic
  • 2 cups chopped sweet onion
  • 1 (16-ounce) jar thick and chunky salsa
  • 1 (15-ounce) can black beans
  • 2 cups fresh or frozen corn
  • 1 (1.25-ounce) packet taco seasoning
  • 1 cup shredded sharp cheddar cheese
  • 10 (8”) tortillas
  • Optional: chopped lettuce, tomatoes, sour cream, hot sauce, and any of your other favorite taco toppings, too!

Directions:

Step 1

Grab a large nonstick skillet and over medium heat, cook ground turkey thoroughly. Then, add in the onions and garlic and cook for an additional 2 minutes, until onions are translucent. Drain any excess liquid if needed.

Step 2

Next, add the salsa, corn, black beans, and taco seasoning to skillet, stirring continuously to combine. Keep cooking for an additional 5 minutes, until heated through. Finally, remove the skillet from the heat and stir in 1 cup cheese, too.

Step 3

Meanwhile, you’ll want to assemble your cones. First, lay a tortilla on a large microwave-safe plate. Then, sprinkle it evenly with garlic powder, onion powder, and salt. You’ll also want to sprinkle 1/3 cup cheese on top of seasonings as well.

Step 4

After you’ve seasoned the tortilla, microwave it for about 45 seconds, just until cheese is completely melted. In order to make the cone shape, remove the tortilla immediately and roll it into a cone, bringing both of the short ends toward one another. Last but not least, press firmly (but gently) around the seam to make sure the melty cheese seals everything in.

Step 5

Now, place a crumpled ball of parchment paper (NOT aluminum foil, wax paper, or paper towel- this is important) into the cone to help keep its shape. 

Step 6

After a few minutes, remove the parchment paper from the cone and begin stuffing the taco meat mixture into the bottom of the cone, followed by your choice of whatever toppings you like, such as lettuce, sour cream and hot sauce. Serve immediately and enjoy!
