Getting the right balance of ingredients is key for this recipe. The meat, breadcrumbs, liquid- you want it just right. Too much breadcrumbs and it’ll turn out crumbly, too little and it won’t hold together. Then there’s the small sautéed onion that adds flavor without the extra moisture you’d get from raw onion. And finally, thanks to a little brown sugar, that sweet and tangy ketchup glaze locks in the moisture so every bite has that perfect saucy finish.
Ingredients
- 2 tsp. extra virgin olive oil
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/2 tsp. finely chopped rosemary
- 1 lb. ground turkey
- 1/3 cup fine bread crumbs
- 1/4 cup chopped fresh parsley leaves
- 1 large egg, beaten to blend
- 2 tsp. Worcestershire sauce
- 1 tsp. Dijon mustard
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- Olive oil cooking spray
- 1/4 cup ketchup
- 1 Tbsp. light brown sugar
Directions
Step 1
First, heat the oil in a medium saucepan over medium high heat. Add the onion and cook, stirring occasionally, until it’s soft and golden, about 4 minutes. Stir in the garlic and rosemary and cook for another minute, just until fragrant.
Step 2
When that’s done, transfer the onion mixture to a medium bowl and let it cool slightly. Add the ground turkey, breadcrumbs, parsley, egg, Worcestershire sauce, mustard, salt, and pepper. Use your hands to gently mix everything together until well combined. Divide the mixture in half and shape into two loaves, each about 5 inches long and 2 1/2 inches wide.
Step 3
After that, lightly coat your air fryer basket with cooking spray. Place the turkey loaves inside and cook at 350°F, flipping halfway through, until the center is 165°F- about 30 minutes total.
Step 4
Lastly, prepare the glaze by mixing together the ketchup and brown sugar in a small bowl. Flip the loaves one last time and spoon the glaze over the top. Cook at 350°F for another 2 minutes, just until the glaze is set and glossy. Serve and enjoy!
