- 1 small yellow onion, chopped
- 2 lb. ground turkey

- 2 Tbsp. tomato paste
- 1 Tbsp. chili powder
- 1 cup low-sodium chicken broth
- 2 heads romaine lettuce, outer leaves separated
- Shredded Mexican cheese
- 1 tomato, chopped
- 1/2 red onion, chopped
- Chopped avocado or guacamole
- Freshly chopped cilantro

Step 1
Heat some oil in a large skillet over medium-high heat. Toss in the onion and cook until soft and fragrant, about 5 minutes. Add the ground turkey, season with salt, and cook while breaking it up with the side of a spoon until it’s fully cooked through, about 4 minutes.
Step 2
Then, stir in tomato paste and chili powder, letting the flavors mingle for a minute. Pour in the broth and let everything simmer, stirring occasionally, until the mixture thickens slightly, about 2 minutes.
