If your family is tired of the same old meals day in and day out, then this veggie stir fry with peanut sauce surely will do the trick. Not only is it loaded with veggies and smothered in homemade peanut sauce, but it pairs perfectly with your favorite noodles. Not to mention, it serves a large crowd and makes excellent leftovers, which means this recipe is bound to become a new favorite.
Ingredients:
Peanut Sauce:
- 1 tbsp sesame oil
- ½ tsp ground ginger
- 3 tbsp soy sauce
- ¼ tsp garlic powder
- ½ cup peanut butter
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 2 tbsp lime juice
- ¼ cup water as needed
- Optional: Sriracha sauce, to taste
Stir Fry:
- 6 oz dried noodles of choice
- 1 tbsp cooking oil of choice
- 3 cloves garlic, finely minced
- 2 Tbsp green onions sliced
- 1 Tbsp freshly grated ginger
- ½ cup shredded red cabbage
- 4 oz mushrooms, sliced
- 1 medium carrot, thinly sliced
- 1 medium red bell pepper, thinly sliced
- 2 large handfuls fresh baby spinach
- 1 cup broccoli, chopped
Garnish:
- Green onions, sliced
- 1 large lime, sliced into wedges
- Cilantro, finely chopped
- Toasted sesame seeds
Directions:
Step 1
Start by preparing the peanut sauce by grabbing a medium saucepan and heating the sesame oil, ginger and garlic over medium-low heat. Cook for about 2-3 minutes, until fragrant. Add in the rest of the ingredients for the peanut sauce and whisk together until fully combined. Once the mixture has come to a low simmer, remove it from the heat and set it aside.
Step 2
After that, prepare your noodles of choice according to their directions. Once cooked, drain the noodles. Then, rinse them with cold water, and add them back into the pot. Lastly, sprinkle in a teaspoon of sesame oil and toss to help prevent sticking.
Step 3
Meanwhile, prepare a large wok set to medium heat. Then, add the cooking oil, along with the additional green onions, garlic and ginger that wasn’t used in the peanut sauce. Sauté everything for 3 minutes, stirring often, until fragrant. Next, add in the broccoli, bell pepper, carrots, cabbage, and mushrooms, and continue cooking for an another 4 to 5 minutes.
Step 4
Once the vegetables have cooked, add in the peanut sauce, noodles, and spinach. Mix until fully combined and then continue cooking for an extra minute or two, or until everything is completely warmed through. Lastly, serve with sliced green onions, sesame seeds, cilantro, plus an extra lime wedge on the side if you desire.
