Garlic Dijon Chicken Recipe

Garlic Dijon Chicken

When it comes to busy weeknights, this recipe is no problem. Basically it’s a go-to for anyone craving comforting, flavorful chicken without spending hours in the kitchen. The marinade hits all the right notes, while a layer of roasted onions on top keeps every bite juicy and satisfying. Quick to prep, quick to cook, and completely delicious- perfect for chaotic evenings when you want dinner done right.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs
  • Kosher salt
  • Ground black pepper
  • 1 large yellow onion, roughly chopped
  • Fresh parsley, chopped
  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1/3 cup extra virgin olive oil
  • 6 garlic cloves, minced
  • 1 teaspoon ground coriander
  • 3/4 teaspoon paprika
  • 1/2 teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional)

Directions

Step 1

Preheat your oven to 425°F. Take the chicken out of the fridge, pat it dry, and season both sides with salt and pepper. Let it sit for a few minutes while you whip up the sauce.

Step 2

Once you’re ready, it’s time to make the garlic Dijon sauce. In a large bowl, combine Dijon mustard, honey, olive oil, garlic, spices, and salt. Mix until smooth and flavorful.

Step 3

After that, you’ll start to coat the chicken in the sauce. While working in batches, toss a few pieces of chicken in the bowl and use tongs to make sure every piece is fully coated. Then, transfer them to a lightly oiled deep skillet or baking sheet. Scrape any leftover sauce over the top and scatter the onions around.

Step 4

Bake in the preheated oven until the chicken is cooked through and reaches an internal temperature of 165°F, about 25–30 minutes. Your kitchen will smell irresistible, by the way.
