If you’re looking for a breakfast that feels like a weekend treat but still packs in plenty of protein, these banana protein pancakes are a great choice. They’re light, fluffy, naturally sweet from the ripe banana, and surprisingly simple to make.
The secret to that fluffy texture? Whipping the egg whites before folding them into the batter. It takes an extra minute or two, but it’s what gives these pancakes their soft, airy texture.

Ingredients
- 40 g vanilla protein powder
- 1 large very ripe banana
- ⅛ teaspoon cinnamon
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 2 large eggs
Optional Toppings
- Fresh fruit
- ⅓ cup plain non-fat Greek yogurt
- 1 tablespoon honey
Directions
Step 1: Separate the Eggs
First, separate the eggs into two clean bowls, placing the egg whites in one and the yolks in the other. Be careful not to let any of the yolk get into the egg whites. This next part is important: make sure your bowl and beaters are completely clean and free of any oil, grease, or traces of egg yolk. Even a tiny bit of fat can prevent the egg whites from whipping up properly.
Step 2: Whip the Egg Whites
Next, use an electric mixer to beat the egg whites on high for about 2 minutes, or until they form soft peaks. Not sure what soft peaks look like? When you lift the beaters, the egg whites should hold their shape for a moment, but the tips will gently flop over.
Step 3: Make the Banana Mixture
When the egg whites are ready to go, grab another medium bowl. Add the egg yolks, banana, protein powder, cinnamon, baking powder, and salt. Beat everything together until the mixture is smooth and well combined.
Step 4: Fold in the Egg Whites
Now comes the step that gives these pancakes their light and fluffy texture. Start by gently folding about a third of the whipped egg whites into the banana mixture. You don’t need to completely incorporate them just yet. Then, add half of the remaining egg whites and gently fold them in. Finally, add the last portion and continue folding just until everything is combined. Be careful not to overmix. You want to keep as much of that airy texture as possible because that’s what makes these pancakes so fluffy.
Step 5: Cook the Pancakes
Once your batter is ready, heat a skillet over low heat. When the skillet is warm, scoop about ¼ cup of batter onto the pan for each pancake. Let them cook for about 60-90 seconds on the first side, then carefully flip and cook the other side until the pancakes are cooked through and lightly golden. Keep the heat low while you’re cooking. This helps prevent the outside from browning too quickly while the centers are still trying to cook.
Step 6: Add Your Favorite Toppings
Once the pancakes are cooked, serve them right away while they’re still warm and fluffy.
For an easy protein-packed topping, stir together ⅓ cup plain non-fat Greek yogurt with 1 tablespoon of honey. Spoon the mixture over the pancakes and finish with your favorite fresh fruit. Fresh berries, sliced banana, or pretty much any fruit you have on hand work beautifully here.
And that’s it! These banana protein pancakes are fluffy, filling, naturally sweet, and a fun way to make breakfast feel a little more special without adding a ton of extra work.
