Broccoli Cauli Rice Chicken Casserole Recipe

This broccoli cauli rice chicken casserole recipe is everything you’re looking for in a meal. For starters, it’s low carb. Not to mention, it’s gluten free and makes excellent leftovers. Plus, you don’t need a ton of pots or bowls to make this dish.

The beauty of casseroles is they’re usually pretty darn big, which means you can easily freeze some for later. This is great for busy schedules, especially if you don’t feel like cooking! As if that wasn’t enough, this recipe packs in a ton of vegetables, making it perfect for even the pickiest eater. While you could easily make this casserole with traditional white rice, swapping in cauliflower rice reduces the carbs and adds in plenty of fiber and healthy vitamins. It’s a win-win.

Broccoli Cauli Rice Chicken Casserole

Ingredients:

  • 2 lbs skinless boneless chicken breasts
  • 1 tbsp. olive oil
  • 2 10-ounce bags frozen cauliflower rice
  • 1 16-ounce bag frozen broccoli cuts
  • 3 cups, shredded mozzarella cheese
  • 1 tsp coarse sea salt
  • 2 tsp garlic powder
  • 2 tsp onion powder

Directions:

Step 1

Start by preheating the oven to 400ยฐF. Spray non-stick cooking spray over a large 3-quart baking dish, or lightly coat with olive oil, if you prefer. Then, set the dish aside.

Step 2

Next, grab the chicken breast and slice in half, lengthwise, to make them thinner. Lightly spread olive oil on both sides of the chicken, then place on a baking sheet. Season a generous amount of salt and pepper and bake for 20-25 minutes, until chicken is completely cooked through.

Step 3

While the chicken is baking, grab the bags of frozen broccoli and cauliflower rice and cook according to their instructions. Discard any excess water or moisture. If you want to take it a step further, you can wring the cauliflower rice gently with a cheese cloth.

Step 4

Once cooked, remove the chicken from the oven and let it cool for at least 5 minutes. Then, carefully cut the chicken into one inch sized pieces.

Step 5

In a large bowl, add cooked cauliflower rice, broccoli, chicken, mozzarella cheese, salt, garlic powder and onion powder. Toss together until fully combined.

Step 6

Transfer casserole mixture to the prepared baking dish and sprinkle with cheese. Bake for 50 minutes, until the cheese on top has fully melted and started to brown slightly. Let cool for 10 minutes before serving.
