Ingredients

  • 2 cups uncooked wild rice
  • 10 cups low-sodium chicken broth
  • 3 heads broccoli, cut into small florets
  • 1 pound white button or cremini mushrooms, finely chopped
  • ½ cup butter, divided
  • 1 medium onion, finely diced
  • 2 carrots, peeled and finely diced
  • 2 celery stalks, finely diced
  • 4 tablespoons all-purpose flour
  • ½ cup heavy cream
  • 1 teaspoon salt, plus more to taste
  • 1 teaspoon black pepper
  • 1 cup panko breadcrumbs

Directions

Step 1: Cook the wild rice.

First, add the wild rice and 5 cups of chicken broth to a medium saucepan. Bring everything to a boil over medium-high heat, then reduce the heat to low and cover the pan. Let the rice simmer for about 35 to 40 minutes, or until the grains begin to split open and become slightly tender. You don’t want the rice to get too soft just yet, since it’ll continue cooking in the oven later. Once it’s ready, remove the pan from the heat and set the rice aside.

Step 2: Blanch the broccoli.

While the rice cooks, bring a large pot of water to a boil. Add the broccoli florets and cook for about 1½ to 2 minutes, just until they turn bright green but still have a little crunch. Next, drain the broccoli and immediately transfer it to a bowl of ice water. This stops the cooking process and helps the broccoli keep its bright color instead of turning mushy. Once it’s cooled, drain it again and set it aside.

Step 3: Sauté the mushrooms and vegetables.

Now it’s time to start the creamy sauce! Heat a large pan over medium-high heat and melt 6 tablespoons of butter. Add the chopped onion and mushrooms, stirring occasionally for about 3 to 4 minutes. The mushrooms will release some liquid as they cook, so give them a little time to soften and let that moisture begin to evaporate. Then, stir in the diced carrots and celery. Cook for another 3 to 4 minutes, until the vegetables start to soften and the mixture takes on a deeper color. This step builds a flavorful base for the casserole.

Step 4: Make the creamy sauce.

Once the vegetables have softened, sprinkle the flour over the mixture and stir well to coat everything. Let it cook for about 1 minute to get rid of the raw flour taste. Next, gradually pour in the remaining 5 cups of chicken broth, stirring as you go to keep the sauce smooth. Bring the mixture to a gentle boil and let it cook for about 3 minutes, until it starts to thicken. After that, pour in the heavy cream and stir until everything is combined. Continue cooking until the sauce reaches a creamy consistency, then season with the salt and black pepper. Give it a taste and add a little more seasoning if needed. If the sauce seems too thick, stir in a splash of extra broth to loosen it up.

Step 5: Layer the rice, broccoli, and sauce.

Preheat your oven to 350°F, then grab a 3-quart baking dish. Spread half of the cooked wild rice across the bottom, followed by half of the broccoli florets. Next, use a ladle to spoon some of the creamy vegetable sauce evenly over the top. Repeat with the remaining rice and broccoli, then pour the rest of the sauce over everything, making sure the vegetables are well covered. You can arrange the rice and broccoli in alternating layers or keep them in separate layers, whichever you prefer.

Step 6: Add the buttery breadcrumb topping.

To give your broccoli wild rice casserole that delicious golden crunch, melt the remaining 2 tablespoons of butter in a small bowl. Add the panko breadcrumbs and toss until they’re evenly coated. Then, sprinkle the breadcrumbs over the entire surface of the casserole. Try to spread them out evenly so every serving gets a little bit of that crispy topping.

Step 7: Bake until bubbly and golden.

Cover the baking dish with foil and place it in the preheated oven. Bake for 20 minutes to give everything time to heat through and allow the flavors to come together. After 20 minutes, carefully remove the foil and return the casserole to the oven for another 15 minutes. This final stretch helps the panko topping turn golden brown and crispy. Once the top looks nicely toasted and the casserole is heated through, take it out of the oven.

Step 8: Let it rest and serve.

Finally, let the casserole rest for a few minutes before scooping it onto plates. This gives the creamy sauce a chance to settle a bit, making it easier to serve.

Enjoy this broccoli wild rice casserole alongside roasted chicken, turkey, or your favorite main dish. It’s hearty enough to stand out on the dinner table, and the combination of creamy vegetables, tender rice, and crispy breadcrumbs makes every bite comforting and delicious!
