Chicken Stir Fry

Ingredients

  • 1/2 cup reduced-sodium soy sauce
  • 2 Tbsp. honey
  • 2 tsp. toasted sesame oil
  • 1 Tbsp. canola oil
  • 1 head broccoli, cut into small florets
  • 2 bell peppers, seeds and ribs removed, chopped
  • 2 garlic cloves, finely chopped
  • 1 lb. boneless, skinless chicken breast, cut into 1″ pieces
  • 1/3 cup raw cashews
  • Freshly ground black pepper

Directions

Step 1

Grab a small bowl and channel your inner saucier. Whisk together soy sauce, honey, and sesame oil until itโ€™s glossy and irresistible. This little trio is the magic thatโ€™s going to make your stir fry sing.

Step 2

Crank up the heat on a large skillet– this is where the action happens. Add a splash of oil and toss in your broccoli, bell pepper, and garlic. Let them sizzle and dance around for about 5 minutes, stirring often so nothing burns (and your kitchen smells amazing). Next, in goes the chicken! Cook it until itโ€™s golden, juicy, and fully cooked- around 8 minutes should do the trick. Then, sprinkle in those cashews for a little crunch party and season with a dash of pepper.

Step 3

Time for the grand finale: pour in your sauce and bring everything to a simmer. Stir occasionally while it thickens up into that glossy, delicious coating- about 5 minutes. Serve it up and prepare for applause (even if itโ€™s just from yourself.)
