Creamy Tuscan chicken in a skillet with sun-dried tomatoes, spinach, and a rich sauce.

Creamy Tuscan Chicken Recipe

If you’re looking for a dinner that feels a little fancy but is actually really easy to make, this creamy Tuscan chicken is it. Tender, golden brown chicken is simmered in a rich, creamy sauce with garlic, sun-dried tomatoes, spinach, and Parmesan.

It’s cozy, flavorful, and comes together in one skillet, which means less cleanup at the end. Serve it with pasta, rice, crusty bread, or your favorite veggies to soak up all that delicious sauce.

Creamy Tuscan Chicken

Ingredients

  • 4 (6 ounce) boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil
  • 4 garlic cloves, minced
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1½ cups heavy cream
  • ¼ cup freshly grated Parmesan cheese

Directions

Step 1: Season the Chicken

First, season both sides of the chicken with the Italian seasoning, salt, and black pepper. Make sure each piece gets a nice, even coating so every bite is flavorful.

Step 2: Sear the Chicken

Next, heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken and sear it for about 3-4 minutes per side, until the outside is nicely golden. When the chicken is browned, transfer it to a plate and set it aside for now.

Step 3: Cook the Onion

After that, add the remaining tablespoon of olive oil to the same skillet. Then, add the chopped onion and cook for 2-3 minutes, stirring occasionally, until it starts to soften.

Step 4: Add the Sun-Dried Tomatoes and Garlic

Once the onion has softened, stir in the sun-dried tomatoes and minced garlic until it’s all mixed in. Cook everything for another minute, stirring occasionally, just until the garlic becomes fragrant. Be careful not to let it burn though.

Step 5: Add the Spinach

Then, toss the spinach into the skillet. It might look like a lot at first, but don’t worry, it’ll wilt down quickly. Cook for about 1 minute, stirring as the spinach softens and mixes with the other ingredients.

Step 6: Make the Creamy Sauce

Now it’s time to turn all those delicious ingredients into a creamy sauce. Pour in the heavy cream and sprinkle in the Parmesan cheese. Stir everything together, scraping up some of those flavorful browned bits from the bottom of the skillet as you go. Bring the sauce to a gentle simmer and let it cook for a minute or two until everything is nicely combined.

Step 7: Add the Chicken Back In

Once the sauce is simmering, nestle the chicken back into the skillet. Be sure to pour in any juices that collected on the plate, too. Let everything simmer together for about 5 minutes, or until the chicken is heated through and the sauce has thickened slightly.

Step 8: Serve and Enjoy

Finally, spoon plenty of that creamy Tuscan sauce over each piece of chicken before serving.

And that’s it! You’ve got tender chicken, a creamy garlic Parmesan sauce, sweet sun-dried tomatoes, and fresh spinach all cooked together in one pan. It’s the kind of dinner that looks and tastes like you spent hours in the kitchen, even though it really couldn’t be much easier.
