There are undoubtedly many reasons to love this healthy chicken noodle soup recipe. For starters, itโ€™s super simple and uses good, quality ingredients. Not to mention, it doesn’t have all the extra over processed junk like most canned soup. Plus, it only takes about 30 minutes to prepare. And if that wasn’t enough, this is a one pot meal, so all you have to do is throw your ingredients into a pot, which means you only have the one pot to clean up.

Unlike some recipes, you can easily make a big batch at the beginning of your week and use it for lunches and dinners. Itโ€™s a simple way to get a balanced meal, packed with tons of veggies and protein.

Ingredients:

  • 1 tablespoon olive oil
  • 3 celery ribs, chopped
  • 2 medium carrots, chopped
  • 1 medium onion, chopped
  • 8 cups reduced-sodium chicken broth
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 3 cups uncooked whole wheat egg noodles (about 4 ounces)
  • 3 cups coarsely chopped rotisserie chicken
  • 1 tablespoon minced fresh parsley

Directions:

Step 1

Start by heating the olive oil in a large saucepan over medium heat. Then, cook the onion, carrots, garlic and celery until the onion is translucent and fragrant, about 5 to 7 minutes. 

Step 2

Next, add the chicken broth, basil, salt, and pepper. Turn the heat up to high and until the broth is at a rolling boil. Then, add the chicken and turn the heat down to medium-low. Let it simmer for 15 minutes. 

Step 3

Now, add the pasta noodles and continue simmering for an extra 10-12 minutes, until pasta is tender and chicken has thoroughly cooked through. Lastly, sprinkle with fresh chopped parsley. Serve while warm and enjoy.
