Honey Garlic Salmon With Broccoli Recipe

Need an easy dinner that feels a little special without making a ton of work for you? This honey garlic salmon checks all the boxes.

You get tender, flaky salmon, crisp tender broccoli, hearty brown rice, and a sweet-and-savory honey garlic glaze all cooked together in one skillet. There’s a quick sear at the beginning that gives the salmon a beautiful golden crust, and then everything finishes up in the oven.

The key is using salmon fillets that are about 1 inch thick so they finish cooking at the same time as the rest of the dish.

Honey Garlic Salmon With Broccoli

Ingredients

  • 1½ tablespoons honey
  • 6 medium garlic cloves, grated (about 2½ teaspoons), divided
  • 1 tablespoon extra-virgin olive oil
  • 4 (5 ounce) skinless salmon fillets, about 1 inch thick, patted dry
  • 4 cups broccoli florets, cut into 1 inch pieces
  • 1 medium red bell pepper, chopped (about 1 cup)
  • 3 large scallions, sliced (about ¾ cup), plus extra for garnish
  • 1 medium carrot, peeled and sliced (about ⅔ cup)
  • ¼ teaspoon cracked black pepper
  • ½ teaspoon salt, divided
  • 2½ tablespoons reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 (8.8 ounce) package microwaveable brown rice
  • ¼ cup unsalted chicken broth

Directions

Step 1

Start by preheating your oven to 400°F. In a small bowl, mix the honey with the grated garlic until well combined. This is going to become that delicious sweet and savory glaze that makes the salmon so good.

Step 2

After that, heat the olive oil in a large skillet over medium-high heat. Then brush the tops of the salmon fillets with 1½ teaspoons of the honey garlic mixture. Save the rest for later.

Step 3

When that’s done, place the salmon in the hot skillet with the honey coated side facing down. Let it cook without moving it for about 1-2 minutes, or until that side is deeply browned and caramelized. Then transfer the salmon to a plate with the browned side facing up.

Step 4

Add the broccoli, red bell pepper, scallions, carrot, black pepper, ¼ teaspoon of the salt, and the remaining garlic to the skillet. Cook over medium heat, stirring often, for about 2 minutes, just until the vegetables begin to soften. Pour in the soy sauce and rice vinegar, then scrape up all those tasty browned bits from the bottom of the pan as you stir.

Step 5

Stir in the brown rice and chicken broth, making sure everything is well combined. Transfer the skillet to the oven and bake, uncovered, for about 10 minutes, or until the broccoli is almost tender.

Step 6

Take the skillet out of the oven and brush the remaining honey garlic mixture all over the tops and sides of the salmon. Sprinkle the salmon with the remaining ¼ teaspoon of salt. Nestle the salmon back into the broccoli and rice mixture, keeping the browned side facing up. Return the skillet to the oven and bake for another 6-8 minutes, or until a thermometer inserted into the thickest part of the salmon reaches 120°F.

Step 7

Finish with a sprinkle of sliced scallions, if you like, and serve it right from the skillet.

Sweet honey, garlicky goodness, tender salmon, and a whole bunch of veggies all in one pan. That’s an easy dinner worth putting on repeat!
