Italian Spaghetti Squash Recipe

When it comes to deciding what’s for dinner, nothing beats a good ol’ pasta dish. And this Italian spaghetti squash recipe is no exception! For starters, it’s stuffed with tasty turkey sausage, melty mozzarella cheese, and mouthwatering marinara sauce. Plus, the squash noodles are similar to spaghetti noodles, but only in vegetable form, making it an excellent lower carb meal.

Italian Spaghetti Squash

Ingredients:

  • 2 large spaghetti squashes
  • 8 ounces Italian turkey sausage links
  • 2 tbsp. extra-virgin olive oil
  • Kosher salt
  • Ground black pepper
  • 1/2 lb. ground turkey
  • 1/2 cup marinara sauce
  • 2 cups mozzarella cheese, shredded

Directions:

Step 1

Preheat the oven to 375ยฐ. First, oil a rectangle baking dish or line it with a silicone baking mat. Carefully, pierce the squash a few times on each side with a fork, then heat it in the microwave for about 5 minutes to soften it up. Afterwards, cut the squash in half, lengthwise, and scoop out the seeds.

Step 2

Place the squash halves- cut side down- in the baking dish. Then, add an inch of water to the pan. Bake for about 40 minutes or until the inside of the squash is tender. Once the squash is cooked, take a fork and remove most of the inside noodle-like strands of the squash, leaving only the shells.

Step 3

Next, grab a large pan and heat the olive oil over medium-high heat. Cook the turkey sausage and ground turkey, using a spatula to break up the meat, for 6-7 minutes or until cooked through.

Step 4

Now, add marinara sauce and the spaghetti squash noodles into the pan. Season with salt and pepper to taste, then stir to combine. Cook for around 5 minutes, occasionally stirring while the sauce heats.

Step 5

Meanwhile, preheat the broiler. Divide the spaghetti squash mixture evenly amongst the two squash shells and top each with a sprinkle of cheese. Put the squashes in the oven and broil for 4-5 minutes, or until the cheese is golden and melty.

Step 6

Lastly, sprinkle chopped parsley over each shell, serve and enjoy!
