Fiesta Taco Salad Recipe

Believe it or not, not all salads are boring. In fact, it’s easy to turn a sad bowl of green leaves into a delicious fiesta full of flavor! Take this tasty fiesta taco salad recipe, for example. First, the ground turkey is a great source of protein and will help fill you up. Next, it’s loaded with crisp, bright veggies. And, of course, the pico de gallo and sour cream. Before you know it, you’ll forget you’re even eating a salad in the first place. Not to mention, there’s no over-processed dressing drenching everything. Instead, you’re eating only fresh, quality ingredients.

Fiesta Taco Salad

Ingredients:

  • 2 lb. ground turkey (or beef)
  • Salt & pepper
  • 3 tbsp. taco seasoning 
  • 2 tbsp. tomato paste
  • 2 (4″) corn tortillas, cut into 1/4″ strips
  • 3 heads romaine, chopped
  • 2 1/2 c. halved cherry tomatoes
  • 1 (15-oz.) can black beans, drained, rinsed
  • 1 c. shredded cheddar
  • 1/2 c. pico de gallo
  • Sour cream, for serving

Directions:

Step 1

First, cook ground turkey in a large cast-iron skillet over medium-high heat. Then, add taco seasoning, tomato paste, and 2 tablespoons water. Continue cooking, stirring occasionally, until turkey is browned and cooked through, about 5 minutes. Remove from heat and set aside.

Step 2

Next, grab a medium bowl and add the lettuce, tomatoes, beans, and turkey. Toss until everything is well combined.

Step 3

โ€‹Finally, scoop out a spoonful of pico de gallo and sour cream on top of the salad. Also, sprinkle some cheese and a few tortilla strips for a bit of added crunch. Serve and enjoy!

This fiesta taco salad is also great for lunches at school or in the office. In fact, you can bring it almost anywhere! Just cook the taco meat and store it in an air-tight container, separate from the veggies, pico, and sour cream. When you’re ready to eat, simply combine all of your ingredients and enjoy!
