Need an easy dinner that feels a little fancy without actually being a lot of work? This sheet pan salmon and potatoes is exactly that. The potatoes get tender and golden, the salmon is seasoned with a simple blend of chili and garlic, and everything cooks together with fresh green beans. Then you top it all off with a creamy garlic herb sauce that adds just the right amount of tang.
Best of all, the whole meal comes together on one pan. Less cleanup, more dinner!

Ingredients
For the Salmon and Vegetables
- 1 lb. small to medium Yukon Gold or red potatoes, halved or quartered depending on size
- 4 (6-oz.) skin-on salmon fillets
- 3 tablespoons extra-virgin olive oil, divided
- 1 teaspoon chili powder
- 1 teaspoon granulated garlic
- 1¼ teaspoons kosher salt, divided
- ½ teaspoon black pepper, divided
- 1 (8-oz.) package French green beans, trimmed
- Zest of 1 lemon
Garlic Herb Sauce
- ¼ cup sour cream or mayonnaise
- 1-2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh parsley, plus more for garnish
- 2 teaspoons Dijon mustard
- 1 teaspoon minced garlic
- Salt and black pepper, to taste
Directions
Step 1: Start with the Potatoes
First, preheat your oven to 425°F. Arrange the potatoes cut-side down on a large baking sheet, leaving a little space between each one. Pour 1¼ cups of water onto the baking sheet- just enough to cover the bottom of the pan- then place it in the oven. Bake for 25-30 minutes, or until the potatoes are fork-tender and most or all of the water has evaporated. If there’s still water left in the pan, carefully drain it or use a kitchen towel to blot it up.
Step 2: Season the Salmon
While the potatoes are cooking, get the salmon ready. Pat the salmon fillets dry with a paper towel, then brush 1 tablespoon of oil evenly over the flesh and skin. In a small bowl, combine the chili powder, granulated garlic, and ½ teaspoon of salt. Sprinkle the seasoning mixture evenly over the salmon, then let it sit for 5-10 minutes while you finish preparing the rest of the ingredients.
Step 3: Season the Potatoes and Add the Salmon
When the potatoes are tender, carefully remove the baking sheet from the oven. Push the potatoes over to one side of the pan, then toss them with 1½ tablespoons of oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Next, arrange the seasoned salmon fillets in the center of the baking sheet. Return the pan to the oven and bake for 5 minutes.
Step 4: Add the Green Beans
After 5 minutes, carefully remove the pan from the oven again. Add the green beans to the open side of the baking sheet. Drizzle them with the remaining ½ tablespoon of oil, then season with ¼ teaspoon of salt and ¼ teaspoon of black pepper. Give them a quick toss so they’re evenly coated. Return the baking sheet to the oven and bake for another 10 minutes.
Step 5: Give the Salmon a Golden Finish
Switch your oven to high broil and broil the salmon for about 2 minutes, just until the tops are golden and lightly browned. Keep a close eye on the salmon during this step. Broilers work quickly, and you don’t want all that beautiful seasoning to go from golden to burnt!
Step 6: Make the Garlic Herb Sauce
While everything finishes cooking, quickly whip up the sauce. In a small bowl, whisk together the sour cream or mayonnaise, lemon juice, parsley, Dijon mustard, and minced garlic. Season with salt and black pepper to taste. If the sauce seems a little too thick, stir in 1-2 teaspoons of water until it reaches the consistency you like.
Step 7: Finish and Serve
After that, sprinkle the salmon with a little fresh lemon zest. If you’d like, add some extra chopped parsley to the potatoes for a fresh pop of flavor. Finally, serve the salmon, potatoes, and green beans while they’re warm, with plenty of the creamy garlic herb sauce on the side.
The crispy edged potatoes, flaky salmon, tender green beans, and creamy lemony sauce make such a delicious combination. It’s easy enough for a weeknight dinner, but feels just a little more special when you’re in the mood for something extra good.
