Sheet Pan Shrimp Fajitas Recipe

When it comes to proteins, shrimp is one of the top choices you can make. For one thing, it’s low carb. Plus, it’s extremely easy to cook and can be paired with many different flavors. Take this sheet pan shrimp fajitas recipe, for example. Not only is it loaded with juicy shrimp, tender onions and bell peppers, but it’s also wrapped inside a soft, warm tortilla. Coupled with the fact that you only need one pan, this meal is perfect for even the busiest weeknights.

Sheet Pan Shrimp Fajitas

Ingredients:

  • 2 lbs. shrimp, peeled and deveined
  • 1 yellow bell pepper, sliced thin
  • 2 red bell peppers, sliced thin
  • 1 orange bell, pepper sliced thin
  • 2 small red onions, sliced thin
  • 1 1/2 tbsp. extra virgin olive oil
  • 1 tsp of kosher salt
  • 2 tsp of chili powder
  • 1/2 tsp of garlic powder
  • 1 tsp of onion powder
  • 1/2 tsp of ground cumin
  • 1/2 tsp of smoked paprika
  • 8 tortillas, warmed
  • 1 lime

Directions:

Step 1

Preheat the oven to 450°. Then, cut your onions and peppers into long, thin slices. In general, shrimp cooks fairly quickly. Because of this, you want the bell peppers and onions slices very thin so they can cook at the same speed as the shrimp.

Step 2

Afterwards, combine the onions, bell pepper, shrimp, olive oil, salt and pepper and spices in a large bowl. Toss to until everything is completely coated. Then, spray a baking sheet with non stick cooking spray, or use a silicone baking mat. Spread the shrimp, bell peppers and onions on baking sheet evenly.

Step 3

Cook at 450° for about 8 minutes or so. Then, turn the oven to broil and cook for additional 2 minutes, or until the shrimp is cooked through and pink in color.

Step 4

Lastly, squeeze some fresh lime juice over the fajita mixture and top with your favorite ingredients, like fresh cilantro, guacamole, or sour cream. Serve in warm tortillas and enjoy!
