Shrimp Fajitas

Ingredients

  • 1 tablespoon vegetable oil
  • 2 cups sliced bell peppers (red, orange, yellow, or a combination)
  • 1 onion, thinly sliced
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 2 tablespoons chopped fresh cilantro
  • 1 pound large shrimp, peeled and deveined, with tails removed if desired
  • Salt and black pepper, to taste
  • Lime wedges, for serving
  • Flour tortillas

Directions

Step 1: Cook the Peppers and Onions

Start by heating the vegetable oil in a large skillet over high heat. Add the sliced peppers and onion and cook, stirring every now and then, until they’re tender and have some nice charred edges. (That little bit of browning adds so much flavor.) Then season the vegetables with salt and pepper and give everything a quick stir.

Step 2: Season the Shrimp

While the vegetables are cooking, mix the chili powder, cumin, garlic powder, onion powder, and smoked paprika together in a small bowl. Then add a little salt and pepper to taste. Next, add the shrimp to the skillet with the peppers and onions, then sprinkle the seasoning mixture over everything. Give it all a good stir so the shrimp and vegetables are coated in that smoky, flavorful seasoning. Cook for about 4-5 minutes, stirring occasionally, until the shrimp are pink and opaque.

Step 3: Build Your Fajitas

Take the skillet off the heat and sprinkle the fresh cilantro over the top. Warm up some flour tortillas and set out your favorite toppings. Sliced avocado, sour cream (or plain Greek yogurt), shredded cheese, salsa, tomatoes, or extra cilantro are all great choices. Serve with lime wedges for squeezing over the top, then let everyone build their own fajitas.
