Sweet Chili Chicken Lettuce Wraps Recipe

If you’re tired of the same ol’ chicken recipe week after week, then look no further. Shake up your menu with some easy (and darn right delicious) lettuce wraps! These sweet chili chicken lettuce wraps are packed with bold flavor and more importantly, fresh ingredients. They’re loaded with flavorful marinated chicken, crunchy veggies, and a hint of lime to tie everything together perfectly. Not to mention, it’s also low carb! You can enjoy these wraps as a simple appetizer or even as a main dish. Healthy food has never tasted so delicious!

Sweet Chili Chicken Lettuce Wraps

Ingredients:

  • 1/2 cup sweet chili sauce
  • 1/3 cup low-sodium soy sauce
  • Juice of 1 lime, plus wedges for serving
  • 3 tbsp. extra-virgin olive oil
  • 1 tbsp. Sriracha sauce
  • 2 tsp. freshly grated ginger
  • 2 cloves garlic, minced
  • 3 boneless skinless chicken breasts
  • 12 leaves romaine or butterhead lettuce, for cups/wraps
  • 1/2 red onion, thinly sliced
  • 1 carrot, shredded

Directions:

Step 1

To start, take a large bowl and add in the soy sauce, lime juice, chili sauce, garlic, ginger, Sriracha sauce, and oil. Next, thoroughly whisk everything together until well combined. Then, add the chicken breasts to the bowl and toss with marinade to coat evenly. While some people like to let their chicken marinade for several hours, you can grab the chicken after 10-15 minutes or so.

Step 2

When your chicken is ready, heat a large pan over medium heat. Add the chicken breasts to the hot pan and cook until golden with grill marks and completely cooked through, about 9-10 minutes per side. Transfer the chicken to a plate to let them rest, then carefully slice into thin strips.

Step 3

Lastly, it’s time to build the lettuce cups. First, open and spread a lettuce leaf. Then, fill the lettuce with chicken and garnish with onion, and carrot. Serve with lime wedges on the side. Additionally, you can add some extra flavor by drizzling on some sriracha sauce or more marinade.
